Coffee Roasting & Retail: January 24 – February 21*
As a student of our Coffee Master Course you will have the privilege of spending multiple days with uncontested leaders of the contemporary coffee world, learning hands-on techniques and practitioner skills but also personal details about their successful coffee businesses taught in their actual shops, roasteries, kitchens and warehouses.
Business of Butchery: April 13 – May 1*
This 3-week Intensive Course is for aspiring entrepreneurs seeking to build food craft skills and grow business expertise in how to own and run a farm-sourced butcher shop. This journey will develop your understanding of what it takes to make it in meat! Classes take place throughout Northern California, including Oakland, San Francisco, Chico, and Siskiyou County. You will learn the keys to fostering relationships with ranches, slaughterhouses, distributors and customers. You will also gain butchering chops from some of America’s foremost masters of the craft. Spend 3 weeks immersed in the most innovative and successful butchery businesses in the country, so that you can start your own!
Chocolate Intensive: July 11 – August 8*
The Chocolate Intensive Course will highlight the making of small-batch bean-to-bar chocolate and handmade confections. Learn hands-on techniques, tricks of the trade as well as all the nibby details of how to run a chocolate business from the pros who have tasted sweet success! As a student of our Intensive Course you will have the privilege of spending multiple days with established artisan chocolate makers, learning practitioner skills as well as personal details about their businesses taught in their actual kitchens and facilities.
The Business of Beer: Oct 24 – Nov 21*
The Business of Beer is a professional development course designed to give you the skills, knowledge and support you need to start your own successful beer business. This Intensive Master Course will provide a unique and in-depth education on craft beer through hands-on instruction from the best brewers in the Bay Area, providing practitioner skills as well as personal details about their businesses taught in their actual breweries and taprooms.
BUSINESS & MANAGEMENT MODULES
In addition to our Master Courses, we offer Business & Management Modules specifically designed for food entrepreneurs. The Business curriculum has been specifically developed for existing food practitioners and is taught by professional consultants who have developed their expertise working specifically with small to mid-scale businesses. Students in these courses will evaluate food craft economic models, develop business plans, write cash flow reports, learn about financing and capitalization options, and evaluate peer business records. Business & Management Modules are offered once per quarter, allowing students to easily bundle classes with our Intensive Master Courses.
