Nearly a decade after falling in love with a Bonnat Chuao bar on an unplanned April Fool’s Day trip to Paris, Jessica Ferraro of Bar Cacao remains committed to her passion to drive craft chocolate in a positive direction. Having a thing for passport stamps, she’s made her way to such cacao origins as the aforementioned Chuao, Venezuela; Belize’s Maya Mountain Cacao; and Baracoa, Cuba. Meanwhile, her pragmatic need for good chocolate at home led her to get her favorite shops versed in her favorite chocolate makers, and she now works with some of the most exceptional craft chocolate makers and retailers in Los Angeles and San Francisco to curate craft chocolate selections for the public. Jessica enjoys educating the public about craft chocolate, so when a chocolate maker or professional comes to town, she frequently arranges for a Meet Your Maker tasting event, as well as informal chocolate Happy Hours. She’s presented at the Northwest Chocolate Festival, judged for the International Chocolate Awards and Good Food Awards and, quite simply, put a lot of chocolate in a lot of mouths over the years. Seems Jessica’s mission is underway. She’s looking forward to sharing her insights into the craft chocolate industry and some finds from her chocolate closet with the Food Craft Institute.
